Child's Recipe for Picky Eaters: Cheesy Potato Cakes

Instructions:

Steam the potatoes until they become soft, peel them, and cut them into pieces.

Chop the beef, onions, and carrots into small pieces, and add a little black pepper and salt. Stir-fry them until cooked, and set them aside.

Mash the steamed potato pieces with a spoon to make mashed potatoes, and then mix them with the cooked beef.

Take an appropriate amount of the potato mixture, wrap it around a piece of cheese to form a patty that's about the size of your palm. (This process is somewhat similar to making dumplings.)

Coat the shaped potato cakes with cornstarch, dip them into beaten eggs, and then roll them in bread crumbs, making sure they are tightly coated. (Coating with cornstarch locks in the moisture within the potato cakes during frying, while the bread crumbs add texture.)

Heat vegetable oil in a pan, ensuring there's enough oil to submerge the potato cakes. Heat the oil to about 170°C (approximately 338°F) and then add the potato cakes. Fry them until they turn golden brown, which should take about 1 to 2 minutes.

Healthy Tip:

Potatoes are good for the stomach, spleen, and dampness. They contain a significant amount of starch, as well as proteins, B vitamins, vitamin C, and more, which can promote digestive function in the spleen and stomach.
